Meet Our New Presenters

To compliment the launch of our new Practical Food Inspection Assessment course, we welcome two new presenters to our team of specialist trainers.

First up, CJ (Carol Jane) Jackson is the director of Seafood by Design Ltd, based at London’s iconic Billingsgate Market in London. 

London born, CJ was educated and brought up in rural Kent. Her interest in fish stems from annual fishing holidays on the Findhorn in Scotland. She trained as a chef at Le Cordon Bleu London School in 1981, returning again later to train and work as a teacher.

Then from vice principal at Leiths School of Food and Wine to working with Waitrose and Marks and Spencer as a fish expert and, in 2005, becoming CEO at Billingsgate Seafood School – CJ’s story has been an extensive one!

CJ is an articulate presenter who is happy to share her extensive knowledge of global species of fish and shellfish, as evidenced by a lengthy spell presenting on Sunday Brunch (a Channel 4 lifestyle programme), where she provided information about various species of fish and ways to prepare and cook them.

Next is Adam Choonara, an experienced environmental health practitioner and academic. Having spent 19 years as a field officer in South London and Kent covering matters in housing, pollution and food safety, he left local authority employment to take up the role of senior lecturer in food safety at Middlesex University, where he remained for the next 20 years. Whilst there, he led on food safety and pestology within the university’s EH programmes, eventually retiring from his role as the programme leader for the master’s in environmental health. During his career, he was heavily involved with CIEH, undertaking a number of roles with its governance structure. 

We’re very excited to have CJ and Adam on board and to see their passion come through in the delivery of this brilliant course.
